摘要： A rotisserie oven is provided having a radiating heating system in combination with a convection heating system to prepare raw meat and poultry food product inside of a cooking chamber. A spit assembly carries the food product, and includes components that are detachable to assist in cleaning. The oven further includes a steam cleaning assembly that is integrated with the convection heating system that assists in grease removal from the components inside the cooking chamber. A humidity removal system regulates the moisture level inside of the cooking chamber during food preparation. A rotisserie oven is provided of the type that includes a cooking chamber having at least one open end closed by a movable door assembly. A radiating heating system is disposed in the cooking chamber and receives electricity to produce radiating heat to cook food carried by a rotating spit assembly. A hood assembly is supported by the cooking chamber, and defines a filtration chamber that receives incoming grease-laden air from the cooking chamber and houses at least one filtration member drawing the incoming air therethrough towards a hood outlet. The hood assembly and cooking chamber move together as the rotisserie oven travels from one location to another.

Each cooling unit is modularly and replaceable without the use of tools by means of a quick connect system. 摘要： A warming chamber defining a heated internal cavity is presented having a door that may be opened or closed to provide access to the cavity for the storage of, for example, food products. The chamber includes a temperature sensor that sends signals to a control regarding the sensed temperature within the cavity. The control then activates heating elements when necessary to maintain the cavity at a predetermined temperature. The control further senses when the door has been opened, and supplies a power boost to the heating elements in anticipation of a cooling effect even though a temperature drop within the cavity has not yet been sensed.

摘要： A controller controls the running speed of a variable speed motor of the type which runs at a speed related to the duty cycle of a pulse width modulated drive voltage applied to it and to the load being applied. The controller includes a setting switch for setting the motor running speed and a device for measuring the load being applied to the motor. Also included is a data storage for storing data representing a plurality of different pulse width modulation duty cycles for driving the motor at various desired motor running speeds and with various loads being applied to the motor. A processor is operatively connected to the setting switch, the load measuring device and the data storage for generating signals representing a particular duty cycle corresponding to a desired running speed setting and applied load to result in the desired motor speed. The processor generates these signals at a predetermined time interval to reach and maintain the desired motor speed. A voltage applying device is provided for applying the pulse width modulated voltage having the particular duty cycle to the motor.
