    • A continuous cooking oven system including enclosure containing a first cooking chamber in communication with a second cooking chamber to efficiently and effectively cook and brown food products. The continuous cooking oven system includes an first conveyor for transporting food products through a helical path within the first cooking chamber, a fan for circulating a heated gaseous cooking medium throughout the first cooking chamber, a second conveyor for transporting food products through a linear path within the second cooking chamber, at least one impingement air flow distribution chamber disposed above the second conveyor within the second cooking chamber and at least one impingement air flow distribution chamber disposed below the second conveyor within the second cooking chamber, the impingement air flow distribution chambers circulating a heated gaseous cooking medium throughout the second cooking chamber. The first conveyor includes a self-supporting pervious belt including a plurality of superimposed tiers which define a pervious annulus through which the heat gaseous cooking medium is circulated.

    • An apparatus for measuring the temperature of workpieces transported on a conveyor is disclosed. In one broad aspect of the invention, the apparatus includes a translatable assembly which has a pick-up tool for picking up workpieces and a temperature-sensing device which is in proximity to the pick-up tool for measuring the temperature of the workpiece. Other embodiments are disclosed, including eliminating the pick-up tool, provided the temperature sensing device travels with the workpiece. Scanners can be utilized to designate the largest of the workpieces to be measured or for detecting overlapping workpieces. Feedback temperature control is achieved by varying a parameter, such as conveyor speed or a heat engine temperature. Also, a modeling module can be incorporated to assist with temperature control of the workpieces.

    • An apparatus for pasteurizing a dry food product comprises an impingement chamber, a conveyor for conveying the dry food product through the impingement chamber; a heater and water supply assembly for generating heated, moist air, and a fan for circulating the heated, moist air through the impingement chamber and onto the dry food product. In operation, the moisture in the heated, moist air condenses on the surface of the dry food product and produces a heat of condensation which heats the surface of the dry food product. Moreover, this heat of condensation is sufficient to kill a percentage of any pathogenic microorganisms which may be present on the surface of the dry food product.
