In an embodiment, a packaged model food composition for thermal testing is included. The packaged model food composition can include a package and a model food composition disposed in the package. The model food composition can include a model food material that shares processing characteristics with a target food material and 0.05 wt. % to 20 wt. % of one or more irreversible thermochromic inks. The irreversible thermochromic inks can exhibit a variable change in at least one color parameter in response to temperature change across a selected temperature range. Other embodiments are also included herein.

摘要： A rapid, low-cost, portable and reliable method for on-site detection of deoxynivalenol (DON), a representative mycotoxin predominantly occurring in grains, would be helpful to control mycotoxin contamination. Herein, a paper-based microfluidic chip capable of measuring deoxynivalenol (DON-Chip) in foods, feeds and feed ingredients was developed. As discussed herein, the DON-Chip incorporated a colorimetric competitive immunoassay into a paper microfluidic device and used gold nanoparticles as a signal indicator. Furthermore, a novel ratiometric analysis method was used to improve signal resolvability at low concentrations of DON. Detection of DON in aqueous extracts from solid foods, feeds or feed ingredients was successfully validated with a detection range from 0.01-20 ppm (using dilution factors from 10-104). Compared with conventional methods, the novel DON-Chip greatly reduces the cost and time of mycotoxin detection in the food and feed industry.

摘要： In an embodiment, a bloom engine is created that can detect the formation of both fat bloom and sugar bloom in a chocolate product. A Raman spectrometer is used to generate a first or reference spectrum of a chocolate product. Based on peaks of the spectrum known to be associated with sugar and peaks of the spectrum known to be associated with fat, a ratio of sugar to fat for the chocolate product is determined based on the reference spectrum. Later, a second spectrum is generated from the chocolate product, and a ratio of sugar to fat is similarly determined for the second spectrum. Changes in the ratios between the two samples are used to detect fat or sugar bloom. Other features of the bloom engine including removing or reducing bloom from the chocolate product using a laser associated with the spectrometer and applying a design to the chocolate product in bloom using the laser.

摘要： A produce freshness sensor inexpensive enough to be discarded after each produce use, and multi-functional that is affixed to the produce by the grower that monitors parameters that affects produce freshness (to measure color and chemical composition), the sensor being used throughout the produce distribution system. A sensor monitors produce freshness and comprises one or more emitters, a temperature sensor, a microprocessor, and a transceiver mounted on a printed circuit board. The sensor is affixed relative to the produce. Power usage is critical to prolong operational time of the temperature sensor. Data collection and transmission are controlled to minimize run time and power usage. An initial baseline is established when the sensor is affixed relative to the produce, the start time and baseline measurements being recorded relative to the baseline. The real-time information is subsequently processed to provide analysis and relevant data to users throughout the produce distribution system.
