摘要： A retort agitation system (100) for thermal processing of products includes product carriers 102a and 102b mounted on a low friction support system 104 for reciprocal movement of the carriers along the interior of a retort. The product carriers are driven in reciprocating motion by a drive actuator system 106 that can be positioned between the carriers 102a and 102b or endwise of the two carriers 102a and 102b. A drive actuator system 106 is linked to the carriers to cause the carriers to move along opposite reciprocating paths lengthwise of the retort. Reaction actuators 108 act on the carriers in opposition to the drive actuator system 106 to apply forces on the carriers for accelerating the carriers along the reciprocating paths of travel when such carriers reach the distal and proximal ends of the reciprocating travel paths.

摘要： An apparatus for chilling hot-bagged food includes a refrigeration device providing chilled air and an enclosure for containing the chilled air. A fan blows the chilled air in a stream within the enclosure and an open-work support movably holds a bag of hot food within the enclosure and in the path of the stream of chilled air. Thus, movement of the bag of hot food both agitates food within the bag and exposes surfaces of the bag to the stream of chilled air to rapidly cool the hot-bagged food. A method of processing food includes packaging and sealing a quantity of cooked hot food into a plastic bag then placing the plastic bag and hot food in an open-work basket movably mounted on a support. The plastic bag and hot food on the support are placed in a refrigerated-air environment and cold air is blown over the bag of food while it is moved to both shift the position of the bag and of the food contained in the bag to expose the bag of food to the blowing cold air and to shift the food in the bag to cool the food. A food-immersed temperature sensor assembly may be used to monitor the food cooling process.

The retort comprises a vessel including a substantially cylindrical shell and a pair of heads respectively closing the ends of the shell. A support for carrying the sealed containers is rotatably mounted within the vessel. The support includes at least one U-shaped channel member having integral lips located on the upstanding portions of the U-shaped channel, whereby a plurality of sealed containers received in the channel are retained in the channel by the lips. The support is rotated in the vessel, and the interior of the vessel is selectively heated and cooled as the support is rotated to accomplish complete processing of the food products within the sealed containers.
