摘要： A kiln including a stove and a heat source wherein the stove includes a chamber, an air guide structure, an exhaust pipe and a heat storage member. The chamber includes a cavity, an entry, and an air outlet. The air outlet is located between a top of the front section of the cavity and the entry. The air guide structure communicates with the air outlet and includes a guide plate. The exhaust pipe is disposed above the guide plate, and an exhaust channel is formed by the guide plate of the air guide structure and the exhaust pipe. The heat storage member covers an exterior of the cavity which is corresponding to the top of the front section of the cavity, and contacts the air guide structure. The heat source is disposed in the stove and adapted to heat the cavity.

The oven housing has a substantially rectangular box frame, clad with a top wall and side walls downwardly depending from the top wall, and a bottom wall connecting the side walls, all defining an interior baking chamber. The baking chamber is heated by a heat source in excess of 700° F. An endless conveyor transports food items to be baked through the baking chamber. The oven has an intermediate panel ceiling assembly disposed within the baking chamber. The assembly has a plurality of ceiling panel holders mounted above the conveyor and spaced below the top wall, each ceiling panel holder substantially spanning the width of the baking chamber. At least one ceiling panel is held within each ceiling panel holder, which is exposed on both sides to the baking chamber for absorbing and distributing heat in the baking chamber.

摘要： A system for support and securement of a thermal heating panel of a carousel oven upper a rotational axle includes a flat upper receiver formed of several diametric strips. The upper receiver is proportioned for complemental receipt of the heating panel. At, or integrally secured to, the bottom of the upper receiver, and situated polarly symmetrically about the axle, is a cradle proportioned for complemental fit upon a male drive shaft at an uppermost end of the axle. Due to the weight of the heating panel and its slow rate of rotation within the carousel oven, the force of gravity of the heating panel is sufficient to maintain the upper receiver and its cradle upon the male drive plate even in the absence of positive securement between the elements. Alternatively, the heating panel is entirely replaced by a grill-like surface, secured above or below the diametric strips to permit the grilling of types of meat or food other than those typically cooked upon the thermal plate panel. In to the grill-like surface may be formed pie-like recesses into which pods are placed, each provided with different quantity or type of food.

摘要： A cook and hold system having an oven, a food warmer and a metallic food tray. The metallic food tray is used in the oven to hold the food products during cooking and then is rapidly transferred to the food warmer for holding. The food warmer has doors that cover the food warmer inlets so as to retain moisture and heat so that the food products are moist and warm when removed from the food warmer. The food tray has a bottom with parallel ribs that provide grill markings on the food products and a trapping of cook byproducts, such as moisture, grease and particles in the bottom spaces along side the ribs. These byproducts help to preserve heat and moisture when the food tray is transferred from the quick cook oven to the food warmer.

The liner has an open the front, a pair of liner side walls and a back wall, and an elongate aperture extending across the back wall and continuing along each liner side wall toward the front to pass over and receive the heating element such that the liner can be inserted into the chamber for use and completely removed for cleaning, without removal of the heating element from the oven.
