    • 본발명은가바고함유이소말토올리고당제조방법및 이에따른가바고함유이소말토올리고당에관한것으로, 보다구체적으로는 (S1) 가바고함유쌀, 증류수및 상기쌀 100 중량부대비 10 ~ 100 중량부의엿기름을혼합하고 35 ~ 55℃에서 3 ~ 6시간동안당화시키는단계; (S2) 상기농축된당액에트랜스글루코시다아제를첨가하여당 전이시키는단계; 및 (S3) 상기전이된당액에효모를첨가하여발효시키는단계;를포함하는가바고함유이소말토올리고당제조방법에관한것이다. 본발명에따르면액화공정을포함하지않아제조공정이간소화되고, 당화단계에서엿기름을다량첨가함으로써당화시간이단축되어제조시간이짧아지게된다. 또한, 가바고함유쌀과다량의엿기름을원료로이용함으로써가바성분을 150mg/100g 이상함유하는이소말토올리고당을제공할수 있다. 그리고, 본발명은당전이공정으로얻은이소말토올리고당을효모를이용하여발효시킴으로써포도당함량이저감된이소말토올리고당을제공할수 있다.

    • The present invention relates to a method for producing a high purity isomalto oligosaccharide syrup using organic rice, wherein the method comprises the steps of: adding water, calcium chloride, and starch liquefying enzymes in organic whole rice or pulverized rice in order to be gelated and liquefied; adding diastatic enzymes in the liquefied rice slurry in order to be saccharized into a high concentration maltose solution; producing an isomalto oligosaccharide trans-solution by adding transglucosidase in the high concentration maltose solution; decomposing residual saccharides, which is a byproduct, into glucose and maltose by adding α-amylase to the isomalto oligosaccharide trans-solution; mixing and fermenting the isomalto oligosaccharide trans-solution including the α-amylase added therein with lactic acid bacteria and yeasts; and filtering, pressing, and concentrating the mixed and fermented isomalto oligosaccharide trans-solution. In the method according to the present invention, high purity isomalto oligosaccharide syrup with improved flavors can be produced by mixing and fermenting lactic acid bacteria and yeasts. Moreover, by reducing the viscosity of an isomalto oligosaccharide trans-solution, high purity isomalto oligosaccharide syrup which has improved filtering efficiency and economical feasibility can be produced.
