    • The onion extract is prepd. by 1) chopping washed and peeled onion into pieces, and pressing onion pieces in a screw-type juicer to obtain the onion juice, 2) adding 0.02-0.3 wt% ascorbic acid, 0.2-0.3 wt% phosphoric acid or citric acid, and 0.02-0.3 wt% cysteine into 100 wt% onion juice, 3) homogenizing it at 500rpm for 15 min., 4) mixing 71.5-91 wt% homogenized onion juice with malto-dextrin and cyclodextrin, re-homogenizing and vacuum concentrating to obtain the final product.
