    • PURPOSE: A method of manufacturing a coating agent composition for fruits capable of inhibiting the decomposition of nutrient such as sugar, acid, etc. contained in fruits by being adhered to the surface of fruits is provided. The agent composition can maintain the storability and freshness of fruits for a long period of time. CONSTITUTION: A chitosan solution having a molecular weight of 10 to 500cp is dissolved in 2% acetic solution, A radiation dose in the range from 2 to 200kGy is delivered over the chitosan solution, sodium hydroxide is then added thereto to neutralize to pH 7.0. Thereafter, 0.5 to 5% by weight of glycerin and 0.01 to 5% by weight of Tween 80 are added thereto and the final solution is controlled to 100% by weight with deionized water.

    • PURPOSE: A method of preparing a chitosan-containing coating agent composition capable of reducing breathability of fruits and inhibiting the self-digestion thereof and decomposition of nutrients thereof such as acid, sugar, etc. during storage by being evenly coated on the fruit surface during soaking and drying is provided. Therefore, the composition can remarkably enhance storability of fruits. CONSTITUTION: In the process of producing the coating agent composition, chitosan is added to deionized water and thereafter agitated with a homogenizer to give a colloidal homogeneous mixture. Then, the mixture is added with lactic acid or acetic acid to thoroughly dissolve chitosan and then with tween 80. The coating agent composition containing chitosan comprises: 0.1 to 10% by weight of chitosan, 0.5 to 5% by weight of lactic acid or acetic acid; 0.5 to 5% by weight of glycerine; 0.01 to 5% by weight of tween; and 75 to 98.89% by weight of deionized water.
