    • PURPOSE: A method for preparing pure (S)-3-hydroxy-gamma-butyractone is to produce pure (S)-3-hydroxy-gamma-butyractone optically on a large scale by preparing an oligosaccharide having alpha-(1,4) bonds with a saccharide distribution appropriate for fabrication of a desired compound through a reaction of naturally occurring amylopectin with an enzyme under certain conditions and subjecting the oligosaccharide to oxidation, esterification and cyclization under certain conditions. CONSTITUTION: A method for optically preparing pure (S)-3-hydroxy-gamma-butyractone from a carbohydrate of polysaccharides comprises: preparing an oligosaccharide having alpha-(1,4) bonds through an enzymatic reaction of amylopectin; oxidizing the oligosaccharide with an oxidizer in the presence of a base; esterifying the oligosaccharide with alcohol using an acid catalyst to obtain (S)-3,4-dihydroxy-butyric acid; and cyclizing the (S)-3,4-dihydroxy-butyric acid in the presence of an acid catalyst.
