    • The present invention relates to a method for measuring a glutaminase enzyme activity in measuring enzyme activities by extracting an enzyme liquid from a cozy culture, including the steps of: adding glutamine; measuring contents of a glutamic acid and the glutamine using a Biochemistry Analyzer system (YSI 2900); and comparing and analyzing enzyme activities by makng a rate of decomposing the glutamine into the glutamic acid into data. In the present invention, since the rate at which the cozy decomposes the glutamine into the glutamate in a manner of measuring a self-expression enzyme activity without decomposing a cozy cell inoculated with a corresponding microorganism under an actual solid culture condition of soy sauce is directly measured, time may be saved, accuracy may be high under a fermentation condition and costs may be saved.
