    • PURPOSE: A chestnut peeling method without generating damages, and peeled chestnuts are provided to simply peel the chestnuts without a separate process. CONSTITUTION: A chestnut peeling method without generating damages comprises the following steps: arranging chestnuts on a drying rack; inserting the drying rack into a drier, and heating the chestnuts for 35-45 minutes at 350-40 deg C after opening an air volume controller; rolling the heated chestnuts, and secondly heating the chestnuts for 35-45 minutes; opening a door of the drier for supplying external air to the chestnuts, and maintaining the temperature of the drier at 35-40 deg C; shaking the drying rack after 30-40 minutes for adjusting the arrangement of the chestnuts, and heating the chestnuts for 30-40 minutes for breaking the dried outer and inner skins of the chestnut; peeling the chestnuts, and dipping the chestnut in cold water for 25-40 minutes for moisturizing; inserting the moisturized chestnuts into the drier, and heating the chestnuts at 35-45 deg C; assorting damaged chestnuts; and freeze-drying the chestnuts in a freezer at 2-3 deg C below zero.
