    • PURPOSE: A method of making instant cooking rice noodles by mixing rice flour, wheat flour, konjak and gluten and then kneading is provided. The product has good eating quality and a high commercial value to maintain suitable physical properties when eaten by a consumer after distribution. CONSTITUTION: A mixture of rice flour and wheat flour at a ratio of 50:50 to 100:0, preferably 70:30 is added with 2% by weight of gluten and 1% by weight of konjak (paste made from the starch of devil's tongue) as a physical property-improving agent and kneaded. Then, the dough is extruded with a conventional noodle extruder and sprayed with spirits. The product in excellent in cooking characteristics, texture and functionality as well as eating quality.

    • PURPOSE: A method of making a functional snack by mixing rice flour with an extract of kelp and brown algae and then extruding it is provided. The snack product contains effective ingredient of seaweeds while having enhanced storage stability without the lowering of palatability. CONSTITUTION: Rice flour is mixed with 5% by weight of powder or an extract of kelp and brown algae and then extruded for 1 to 2min. Preferably the kelp and brown algae have a moisture content of 18%. The extruded snack of the seaweed extract exhibits better palatability than that of the seaweed powder.

CONSTITUTION: In the process for the manufacture of rice snack, a snack material containing 18% by weight of kelp powder is extruded from a barrel of 100deg.C and then dried at 60deg.C for 8hr to give a snack product having a moisture absorption index of 656%, a texture of 12,073.94g/cm2 and a swelling rate of 1.67. In the extrusion process, the optimum amount of moisture for molding the snack is 18%.
