    • PURPOSE:To brew a low concentrated beer equal to an ordinary beer with respect to flavor, by blending a highly concentrated solution consisting of a fermented solution of barley juice with a specific raw barley juice concentration after highly foaming period and a low concentrated solution consisting of a fermented solution of barley juice or barley juice with a specific raw barley juice concentration, followed by fermentation. CONSTITUTION:A highly concentrated solution consisting of a fermented solution of barley juice having a raw barley juice concentration 14-21 deg.P after highly foaming period is blended with a low concentrated solution consisting of a fermented solution of barley juice or barley juice having a raw barley juice concentration 3-6 deg.P. The low concentrated and highly concentrated solutions are obtained from a mash consisting of a mixture of malt and about 0-50wt% based on mixture after mixing secondary raw material. The low concentrated barley juice or its fermented solution has a total nitrogen concentration not less than about 30mg/100g, and a formal state nitregen content not less than about 9mg/100g. Usually, 1pt.vol. highly concentrated fermented solution of barley juice is blended with about 2-5pts.vol. low concentrated barley juice or its fermented solution.
