【解決手段】まな板２０の上面に突条部２１を一体的に形成し、この突条部２１に包丁の刃先を入れる角度設定用スリット２２を、該突条部２１の横方向に刺身１切れ分の厚みに対応させた間隔で多数形成する。各角度設定用スリット２２は、垂直面に対して傾斜角度αでもって傾斜させていると共に、水平面上では傾斜角度βでもって傾斜させている。包丁の刃先を角度設定用スリット２２に入れると、柵を切っていく際の包丁の刃の垂直面上及び水平面上における傾きを自動的に設定することができる。
