摘要： PURPOSE:To produce L-serine on an industrial scale at a low cost by reacting D-glyceric acid or L-tartaric acid with a specific enzyme and treating the resultant beta-hydroxypyruvic acid with a specific enzyme. CONSTITUTION:D-glyceric acid is treated with one or more kinds of enzymes selected from D-lactic acid dehydrogenase, glyoxylic acid reductase, D-glyceric acid dehydrogenase and beta-hydroxypyruvic acid reductase in the presence of NAD to obtain beta-hydroxypyruvic acid. The objective L-serine can be produced in high efficiency by treating the beta-hydroxypyruvic acid with L-alanine dehydrogenase in the presence of ammonia and NADH produced as a by-product of the above reaction. As an alternative, L-tartaric acid is treated with L- tartaric acid decarboxylase in the presence of NAD and the produced D-glyceric acid is used in the above reaction. L-serine can be produced at a low cost and high raw material conversion by this process.
