    • PROBLEM TO BE SOLVED: To provide a method for producing a concentrated alcohol in high efficiency in a short time to reduce the distillation cost of the produced alcohol and the waste-water disposal cost in the production of the alcohol by fermentation, and to provide an apparatus for the production method. SOLUTION: A concentrated alcohol is produced by preparing an initial fermentation liquid having a sugar concentration not to inhibit the fermentation of an alcoholic fermentation yeast and a feeding sugar liquid having a sugar concentration higher than that of the initial fermentation liquid by using a sugar or a sugar-containing material as a raw material, inoculating an alcoholic fermentation yeast to the initial fermentation liquid to perform alcoholic fermentation, adding the feeding sugar liquid to the fermentation liquid while directly or indirectly monitoring the sugar concentration of the fermentation liquid, continuing the alcoholic fermentation while controlling the sugar concentration of the fermentation liquid, finishing the addition of the feeding sugar liquid within the period corresponding to 30-80% of the total alcoholic fermentation period, and carrying out alcoholic fermentation by semi-batch fermentation method until the alcohol concentration reaches ≥15 vol/vol%.
