      SOLUTION: The method for producing a coffee extract having the mass ratio of hydroxyhydroquinone/chlorogenic acids of less than 10/10,000 includes bringing a coffee extract of a raw material into contact with a polyvinylpyrrolidone within a range calculated by the equation (1): (mass of the polyvinylpyrrolidone)/(mass of the solid component in the coffee extract of the raw material obtained by a refractometer reading (Brix) for sugar at 20°C)=0.2-0.8.
