    • PROBLEM TO BE SOLVED: To obtain the subject food having a fatty texture like that of fatty tuna flesh, especially exhibiting a meltable mouth touch, when fresh red tuna flesh is used as the fresh flesh, by adding a tuna cake oil to the fresh flesh. SOLUTION: A fresh flesh is mixed with a tuna cake oil. The fresh flesh is preferably a minced tuna red flesh. The objective food is obtained e.g. by mincing a fish flesh low in a fat content and subsequently mixing the minced product with the tuna cake oil. Or, the fish flesh may be mixed with the tuna cake oil and subsequently minced. Therein, the upper limit of the amount of the added tuna cake oil is preferably approximately 25%. The tuna cake oil is usually obtained by a centrifugal separation or as filtration residual oil by removing acids from the tuna flesh oil, decoloring the treated tuna flesh oil and subsequently subjecting the treated oil to a wintering process comprising cooling the treated fish oil to crystallize the oils low in the unsaturation degrees, and subsequently removing the crystals by a filtration or centrifugal separation method, etc.
