摘要： PROBLEM TO BE SOLVED: To obtain an antimicrobial agent capable of causing an excellent antimicrobial activity, having high safety, widely applicable to foods and beverages, cosmetics, and the like, by making the agent include an extracted fraction of Sake (rice wine) lees with ethyl acetate as an active ingredient. SOLUTION: This antimicrobial agent comprises at least one of a compound of formula I, a compound of formula II and a salt thereof as an active ingredient. The compounds of formula I and formula II are preferably derived from rice and/or its processed products (preferably Sake lees). For example, an extract of Sake lees with ethyl acetate is purified by reversed-phase HPLC to give a white crystal compound having antimicrobial activity. Consequently, the agent has not only excellent antimicrobial activity but also extremely high safety, is useful without anxiety as an antimicrobial agent for beverages, foods, medicines, and the like, for sterilization and prevention of decay, or the like. The antimicrobial agent is excellent with respect to the effective use of by- product of refined Sake.

摘要： PROBLEM TO BE SOLVED: To readily and accurately isolate a monoploid strain of a practical yeast without using an experimental system comprising a great number of nutrient cells as a conventional method by selecting a variant having a high spore formation ratio from a parent strain. SOLUTION: A variant having a high spore formation ratio is selected from a parent strain. The selection of the variant is preferably carried out by using at least one of ethionine sensitivity, growth in a β-alanine medium at 35 deg.C and a constituent type acidic phosphatase activity as an index. A variant having ethionine sensitivity, for example, is obtained by culturing a yeast in a YPD medium, varying the yeast by irradiation with X rays, then culturing the variant in an SD medium containing 1mM ethionine, adding nystatin, continuing the culture to destroy an ethionine-resistant strain and further selecting a strain excellent in spore formation ratio from the living yeast. A monoploid strain of yeast, for example, is obtained by culturing a variant in a spore forming medium, dissolving an Ascus wall of the prepared Ascus, separating a single spore and culturing the spore.

Saccharomyces cerevisiae X-4 (FERM P-1,1424), a transformant of Saccharomyces cerevisiae K-7 (JCM1818), may be cited as the example of the transformant. Production of fermented foods and drinks, etc., using the above-mentioned Saccharomyces cerevisiae X-4 strain can be carried out accord ing to conventionally ordinary manufacturing method and this method is excel lent in terms of this point.
