摘要： PURPOSE:To prepare packed tofu which can be used in multi-purpose heating, by placing a number of packs each containg a block of tofu for one or two meals in a container. CONSTITUTION:Water is charged into the hot water tank 1, and a number of small packs suitable for one or two meals and containing soya milk and bittern are placed in the treating chamber of each frame A having a floor. The valve 7a of the burner 4 is closed and the valve 6a of the water boiler 2 is opened to heat the water in the hot water tank 1 and to introduce the hot water into the frames A. The soya milk contained in the pack is coagulated to tofu, and the used hot water is discharged through the line 16. In the case of using the burner 4 in multi-purpose use, the lid is removed, the trivet 5 is fitted in the receptor, the cooker, steamer, fry pan, etc. are placed on the trivet 5, the valve of the water boiler 2 is close, and the burner 4 is lighted.

摘要： PURPOSE:A plurality of small vessels are filled with an ingredient, soybean milk and bittern and they are coagulated by heating, then cooled, whereby packed soybean curd containing an ingredient is inexpensively produced, which can keep high freshness for a long period of time. CONSTITUTION:Valve 14a is opened, valves 15a and 16a are shut and pump 7 is made to rotate reversely to introduce hot water of higher temperature at the upper part of tank 1 from pipe 14 through pipes 12, 13 and 10 into the bottom part of the tank 1, whereby the hot water in the tank 1 is made uniform. Meanwhile, a plurality of small vessels of a capacity corresponding to 1 or 2 meals are filled with desired ingredients 29, cooled soybean milk and bittern. A desired number of the vessels are placed in parallel in the treating chamber provided with bottomed frames A and heated with hot water of about 80 deg.C to coagulate the soybean milk in the vessels. Then, hot water valve 10 a is closed, simultaneously cool water valve 11a is opened to introduce cool water into the treating chamber of the bottomed frame A for cooling. The cool water is circulated and sent to cooling water tank 2, whereby the soybean curd 30 including ingredient 29 in a vessel 28 is obtained.

摘要： PURPOSE:To recover soy bean oil from bean-curd refuse in good yield and to obtain a defatted bean-curd refuse which can be used for many purposes by decreasing the water content of bean-curd refuse, extruding the product with a screw extruder and extracting the contained oil from the extrudate with a solvent. CONSTITUTION:Bean-curd refuse is heated to decrease its water content to 15% or below. The refuse of a decreased water content is extruded at 100 deg.C or above with a screw kneader/extruder, and the oil is extracted from the extrudate with a solvent. According to this process, the storage stability and workability in the subsequent steps can be effectively improved by drying the refuse to a water content of 15% or below. Although a decrease in the water content to 15% or below is very effective in improving the efficiently of solvent extraction, no further effect can be attained even when the water content is decreased to 3% or below; therefore it is desirable in this process to use a water content in the range of 3-15%.
