    • PROBLEM TO BE SOLVED: To provide a method for producing L-talitol, by which the objective L-talitol can be produced in high purity and in high yield by a biochemical means friendly to environments.
      SOLUTION: Metschnikowia koreensis LA1 (NITE P-19) has an ability to produce L-talitol from L-psicose. The method for producing the L-talitol, comprising bringing L-psicose of raw material into contact with a microorganism to convert into the L-talitol, is characterized by using a yeast belonging to the genus Metschnikowia having an ability to convert the L-psicose into the L-talitol as the microorganism. The contact with the microorganism is carried out by adding the L-psicose of raw material to the cells obtained by culturing the microorganism and then incubating the mixture. The microorganism is brought into contact with the L-psicose of raw material in the form of an aqueous solution containing the L-psicose. The yeast belonging to the genus Metschnikowia is Metschnikowia koreensis. The produced L-talitol is recovered.
