    • PROBLEM TO BE SOLVED: To provide an iodine absorption multispectral method for simply, easily, quickly and accurately estimating the physical characteristics such as hardness, viscosity and tasting quality of starch. SOLUTION: An iodine absorption multispectral measurement apparatus is provided with a continuous flow analyzer and a multispectral spectrophotometer. The continuous flow analyzer and the multispectral spectrophotometer are connected, a starch or a starch-containing grain powder is applied to the measurement apparatus, and a first iodine absorption multispectral data are obtained. The physical characteristics and the tasting quality of the starch or the starch-containing grain powder are measured, by a means other than the measurement apparatus. After the correlation data between the physical characteristic and the tasting quality are derived and stored, a second iodine absorption multispectral data of an unknown starch or starch-containing grain powder is obtained and applied to the correlation data, and the physical characteristics and the tasting quality are inferred.
