    • PROBLEM TO BE SOLVED: To inexpensively obtain L-aspartic acid for medicines, food additives, etc., by isomerizing an aqueous solution of ammonium maleate, treating the resultant isomer with aspartases in the presence of NH3 , subjecting the product to acid deposition with maleic acids, removing NH3 and recycling NH3 . SOLUTION: In this method for producing L-aspartic acid comprising using an aqueous solution of ammonium maleate as a raw material and subjecting the aqueous solution of ammonium maleate to isomerization reaction to afford an aqueous solution of ammonium fumarate, then treating the ammonium fumarate with aspartase or a microorganism which produces aspartase to give an aspartic acid ammonium aqueous solution, then subjecting an aqueous solution to acid deposition using maleic acid and/or maleic anhydride to deposit aspartic acid and separating and recovering the aspartic acid, a mother liquid containing monoammonium maleate after acid deposition is used as the following raw material and an aqueous solution of the product after enzymatic treatment is distilled to carry out deammonium and ammonium-containing gas distilled away from the tower top is recycled as a reaction raw material to efficiently and inexpensively obtain the objective L-aspartic acid.
