    • PROBLEM TO BE SOLVED: To obtain cereal with low allergen having excellent nutritive value and easily cooked with a household rice cooker, especially brown rice with low allergen suitable for meals for patients with allergy to rice. SOLUTION: The cereal is obtained by subjecting cereal to wet treatment followed by moist heat treatment. The cereal belongs to the first and/or the second filial generation of rice plant. The cereal has a little salt-soluble protein containing allergen compared to ordinary cereal and excellent taste. The main allergen protein of rice of 14-16 kDa belonging to albumin fraction and the allergen protein of 26 kDa belonging to globulin fraction can be each removed or lowered. COPYRIGHT: (C)2004,JPO
