    • PURPOSE:To produce an edible vinegar having excellent taste and flavor continuously in high yield, by filling a fibrous carrier in a fermentation column having a structure to enable the passage of a liquid, applying acetobacter to the carrier and supplying raw material of edible vinegar to the fibrous carrier and, at the same time, passing an oxygen-containing gas through the column. CONSTITUTION:A fibrous carrier 13 supporting acetobacter is filled in a fermentation column 11. A raw-material-introducing pipe 14 and a gas-circulation pipe 20 are connected to the column, and an oxygen-supplier 23 is connected to the gas-phase part 18 of a gas-liquid separation tank 16 via a gas-feeding pipe 21. The oxygen concentration in the gas phase is controlled by the oxygen concentration controller 24 and a part of the fermentation raw material is taken out of the column. The residual alcohol concentration is determined by the alcohol concentration detector A, the flow rate of the feeding pump 7 supplying the raw vinegar in the raw vinegar tank 9 to the introducing pipe 14 is controlled by the alcohol concentration controller B, and the alcohol concentration in the fermentation raw material is adjusted to 0.1-2.0% after contacting with the fibrous carrier.

    • PURPOSE:To execute continuous filtration for a long time without clogging and to improve production efficiency by turning conical rollers in a spiral direction while compressing filter media, and compressing and moving the liquid fed into the filter thereby filtering the liquid. CONSTITUTION:When a revolving shaft 11 is rotated by driving a motor 13, conical rollers 10, 10 are turned. A pump is then operated to feed forcibly the original liquid to be filtered from a supplying pipe 8 through the opening 7A at the outside end of filter media 7 toward the outermost tube. The original liquid moves toward the inside in the spiral passage while the volume in the arc part partitioned by the rollers 10, 10 is gradually reduced and the amt. corresponding to the reduced volume in the arc part is filtered during said movement. The filtrate is discharged in the form of a clean liquid through an outflow port 6.

    • PURPOSE: To prepare high-quality vinegar, in a short time in high yield, by vertically placing carrier membrane carrying acetobacters in a closed fermentation tank, and flowing down the raw material of vinegar along the membrane from above while keeping the atmosphere to a specific oxygen concentration.
      CONSTITUTION: The top end of the carrier membrane 2 carrying acetobacter is inserted closely into the slit 4 opened to the bottom of the raw material reservoir 3 which is positioned at the upper part of the closed fermentation tank 1. The raw material of vinegar is supplied through the feed pipe 5 and the slit 4 of the reservoir 3 to the top of the carrier membrane 2, permeatd into the membrane 2, made to contact with the acetobacter in the membrane, and circulated to the tank 1 through the pipe 24, the raw material tank 11, the pump 12, the heat exchanger 16 to keep the material at the optimum fermentation temperature. Separately, the oxygen concentration in the tank is detected by the oxygen concentration sensor 9 placed in the vapor-phase, the signal of the sensor is converted to electrical output by the oxygen concentration controller 10, and the valve 7 is operated by the output signal to supply oxygen from the oxygen source 8 to the tank 1 to maintain the oxygen concentration in the vapor phase to 5W60V/V%.

    • PURPOSE: To prepare high-quality vinegar in a short period, by rotating plate members to which acetic acid bacteria are previously attached, by carrying out acetic fermentation with bringing partially the plate members into contact with an unrefined raw material for vinegar.
      CONSTITUTION: The revolving shaft 3 is supported horizontally on the bearing 3 set on the surroundings of the fermentation tank 1 in which the unrefined raw material 2 for vinegar is sealed, the revolving shaft is constructed in such a way that it can be driven and rotated by a motor, etc., and the plate members are partially kept in the unrefined raw material 2. The temperature of the unrefined raw material 2 is measured by the thermometer 6, the measured signal is converted into a contact signal by the temperature control unit 8, by the signal are opened and closed control valves for feeding warm and cold water to the heat exchanger 7, so that the temperature of the unrefined raw material is automatically kept constant.     • PURPOSE:To enable the appropriate setting of the conditions of various brewing operations, by determining the amount of oxygen feed continuously, taking advantage of the vigorous proportional relationship between the amount of oxygen feed and the amount of produced acetic acid. CONSTITUTION:The brewing tank 1 contains the vinegar raw material 10 and the vapor space 11, and the temperature in the tank 1 can be controlled by circulating the vapor in the tank through the temperature controller 12, the vapor circulation apparatus 13 and a pipe 14 connecting two separate points of the vapor space 11. When the oxygen concentration in the vapor space 11 is decreased below the preset level, the valve 3a is opened by the oxygen partial pressure controlling device 16 connected to the oxygen concentration detecting element 15. The valve 3a is preferably an electromagnetic valve which supplies a definite amount of oxygen per one opening and closing cycle. The amount of oxygen feed can be determined by recording the number of the opening and closing cycles with the recorder 3b.
