    • The invention relates to a device for the circular kneading of dough pieces, having a drum (2) with openings (6) for receiving the dough (10) that is to be kneaded. These dough pieces (10) are kneaded by an inner drum (8) which is fitted inside the drum (2) and executes a kneading movement in relation to said drum (2). The lagging of the inner drum (8) has cavities (9) which are assigned to the openings (6) in the drum (2). At least one section of the lower half of the drum is accompanied by a support element (13) which is guided along the periphery of the drum (2), at least partially at a certain distance therefrom. This support element has a plurality of parallel links (15) which are connected to form an endless chain (14) that follows the movement of the drum. This chain (14) supports the dough pieces which are in the openings (6) during the kneading movement. In order to avoid the formation of stripes on the kneaded dough pieces, the links (15) are configured to form a closed surface, optionally by means of filler pieces (25) fitted between the links (15) on the side facing the drum (2). This closed surface is essentially level when the support element (13) is in the extended state.

    • A device for kneading dough comprises a frame (1) to accommodate a container (7) for the dough to be processed, (which container can rotate about a vertical axis (9) under the action of a drive (8). The frame (1) supports two kneading tools (3, 4), both of which are coupled at their upper ends to a crank arm (19). Both crank arms (19) revolve in opposite directions about horizontal axes. Each kneading tool (3, 4) is also coupled to the frame (1) via a connecting rod (27) running from the kneading tool (3, 4) outwards to the coupling point (29) on the frame (1). Both crank arms (19) are arranged mutually offset so that the lifting and lowering movements of the two kneading tools (3, 4) occur at different times, thereby imitating manual kneading and improving the mixing action.

    • Disclosed is a device for dividing dough into portions, with a feed shaft (31) for the dough. Located in this shaft is a pre-portioning tool (51) in the form of two counter-rotating star-section rollers (32) which are driven to turn when the amount of dough in the chamber (30) situated beneath them drops below a given value. The dough is pushed by a pushing device out of this chamber into recesses (4) in the outer wall of a drum (2) which is rotated in steps. The volume of dough in the chamber (30) is monitored by a capacitative sensor (35) built into the wall (36) of the feed shaft in such a way that the sensor (35) does not impede the flow of dough.
