    • A method and apparatus for carrying out a meat packing process in which carcasses of animals (102) are weighed (100) and moved on a boning line (101) in sequence past a number of boning and trimming stations (103 and 105). The trimmed cuts are transferred to a main conveyor (108). The cuts are placed in bags dispensed by one or more machines (22) which produce bags whose lengths and widths are matched to those of the cuts placed therein. Each hook (38) has a bar code (39) which is scanned at the boning stations. Feed conveyors (241-243) are controlled by the central processor (34). The travel of the main conveyor (108) is monitored by the central processor so that each position on the main conveyor to which the cuts are transferred from the feed conveyors is identified at each trimming station and at the bagging station. By this means each bagged cut can be identified with the animal from which it was derived

    • The invention provides a process and anal seal for sealing the anus of the carcass (10) of a slaughtered animal. The anal seal includes a plug (15) for insertion through the anus so that tissues (11) contract behind the plug, a clamp (20) movable towards the plug to clamp the tissues behind, and retaining means (40) to hold the clamp in its clamping position. The plug (15) is conical and has a back end (17) so that the clamp which is in the shape of a clamping disc (22) clamps against periphery (18) of the back end of the plug. The clamp (15) can slide on a stem (32) extending from the back end of the plug. The retaining means (40) can comprise biasing means (48) or a latch (41) to hold the clamp in its clamping position. An applicator tool (60) can mount the anal seal during insertion of the plug into the rectum and move the clamp from a retracted position to its operative clamping position.

    • The invention relates to a method for the evisceration of carcasses conveyed on a slaughter line suspended in gambrels or hooks, where the abdomen and breast have been cut open, the hams divided and the fat end loosened, and wherein the carcass intestines are loosened, removed and placed on a gut pan or conveyor, the diaphragm is loosened and the plucks are removed and placed on a plucks conveyor. In loosening of the intestines, the connections of the intestines with the spinal column are broken, so that the intestines are made to hang out of the abdominal cavity. The diaphragm and leaf fat are loosened mechanically while the intestines are hanging out of the carcass and are connected to the plucks. The latter loosening is effected by a pressing device (5) and a hoop device (6) which can be moved independent of each other in the lengthways direction of the carcass. By means of the method, the intestines and plucks can be removed as a set of organs from the carcass and are subsequently separated, providing hygienic advantages. Alternatively separation may be carried out after the connection between the intestines and the plucks has been pulled out of the carcass and before the connection of the plucks with, for instance, the head, has been broken. The diaphragm and leaf fat are removed from the carcass along with the organs.

The hoist can also be carried by hand or across the shoulder using a chain (20). A companion to assist in the use of the game hoist is not necessary, as it is light in weight and simple to use.
