    • Disclosed is a mayonnaise base which is mixed with eggs by consumers to give mayonnaise. The mayonnaise base consists indispensably of vegetable oil, vinegar and emulsifier (except egg yolk) along with other seasonings (except vinegar) and spices, and is stored in an oxygen-free container. The mayonnaise base is mixed with fresh eggs by consumers to give mayonnaise with ease. In accordance with the consumers' request, either whole eggs or only egg yolk or albumen can be added to the mayonnaise base.

    • PROBLEM TO BE SOLVED: To provide a protein remover for brewage, which quickly adsorbs and removes protein in brewage (refined rice wine, unrefined rice wine, etc.) without deteriorating quality.
      SOLUTION: The protein remover for brewage comprises a hydroxyapatite as a raw material. In preparing the hydroxyapatite by reacting a Ca source with a phosphoric acid source, the hydroxyapatite is produced by adding an alkali carbonate instead of an alkali. Protein in the refined rice wine is quickly adsorbed and removed. Since a used protein remover desorbs an adsorbed protein under mild conditions, the remover is regenerated at a low cost and the adsorbed protein is recovered and effectively used.
