    • A process for freezing sushi, boiled rice or processed food containing boiled rice is described. The method permits to achieve substantially the same quality after natural thawing or thawing in an electric oven as before the freezing step. In one embodiment the process consists of three steps: Firstly the temperature of the product is reduced to 0 - -4 DEG C, secondly the temperature is reduced until having passed the maximum ice generation temperature range (up to -10 DEG C), lastly the food is cooled to at least -15 DEG C.
