摘要： The present invention relates to a process for producing a black tea product. Although there are prior art documents which disclose processes that result in black tea products which have good colour characteristics, still there is need for a black tea product and a process for producing the same which is rich in red colour when constituted into a beverage and also a black tea beverage with improved red color. It is another object of the present invention to provide a black tea product which is significantly rich in red color when constituted into a beverage. The present invertors while working extensively to improve the sensorials of black tea products surprisingly have found that addition of a particular amount of ascorbic acid along with tannase in the fermentation stage produces a tea product which is significantly richer in red color when constituted into a beverage.

摘要： The present invention relates to a process of producing a green leaf tea. More particularly the present invention relates to a process of producing a green leaf tea with higher soluble solids and unique aroma characteristics. Accordingly, the present invention provides a process of preparation of green leaf tea product comprising the steps of: a. incubating fresh tea leaf at a temperature in the range 4°C to 80°C under anaerobic conditions for a period of 4 to 72 hours; b. subjecting the incubated leaf to a step of thermal treatment at a temperature in the range of 60°C to 250°C for about 15 seconds to 60 minutes; c. drying the leaf to a moisture content less than 8% by total mass of the tea leaf to obtain a green leaf tea.

摘要： The present inventionrelates to a liquid tea product and a process for preparing the same.We have found that by keeping the fresh tea leaf in water (before processing it to produce conventional leaf tea product) for long hours followed by separation of the liquid from it provides a liquid tea drink which is not appealing to the consumers due to its colour characteristics. It is therefore an object of the present invention to provide aliquid tea product with improved colour characteristics. The present inventors havesurprisingly found that by keeping the fresh tea leaf in water for a particular period of time in a particular ratio followed by separating the tea leaf from the resultant water and heating the resultant water fora particular time at a selected temperature provides a liquid tea product with improved colour characteristicsand is able to satisfy consumer need.

摘要： The present invention relates to a tea product and more particularly the present invention relates to a black tea product. According to the present invention there is provided a process for producing a tea product comprises the steps of: a) extracting a leaf tea product comprising both a soluble part and an insoluble part with a solvent; b) separating the insoluble part from the soluble part; c) compacting the insoluble part to obtain a base tea material; d) drying the base tea material to a moisture content of less than 5% by weight. e) contacting the soluble part obtained in step (b) with the dried base tea material; f) further drying the mixture to obtain the tea product.
