摘要： PROBLEM TO BE SOLVED: To obtain a new α-glucosidase, having a mutation in a specific position of an amino acid sequence of the α-glucosidase, deprived of the affinity for a trehalose in diglucoses and capable of removing a maltooligosaccharide from the trehalose. SOLUTION: This new α-glucosidase is a new protein having a sequence in which at least Gly at the 273rd position is substituted by another amino acid residue in an amino acid sequence represented by the formula and α- glucosidase activities is remarkably deprived of the affinity for a trehalose in diglucoses. The α-glucosidase is capable of removing the unreacted maltose, maltooligosaccharide, isomaltose and isomaltooligosaccharide from a reactional product by using the enzyme protein in a production process for the trehalose and providing the high-purity trehalose. The protein is prepared by carrying out the site-specific mutation treatment in a part of the gene of the α- glucosidase protein according to a conventional method and then expressing the gene in a host cell.
