    • PURPOSE:To speed up the treatment process so as to shorten the time required for elevation and lowering of an injection needle while keeping the injection rate of a pickle liquid to an optimum value without reducing it, in an injector for injecting the pickle liquid into a raw massive beef. CONSTITUTION:An injection needle 1 is operated so as to be elevated or lowered by a drive mechanism such as an AC servo motor 39 and a program control unit 44 is connected to the drive mechanism so as to change the speed of the drive mechanism according to a program set in advance. Thereby, the injection needle 1 is lowered at a high speed V1 before the infection needle 1 is thrust into a raw massive beef. The injection needle 1 is lowered at an optimum speed V2 until the infection needle 1 reaches the deepest position after being thrust into the raw massive beef. The injection needle 1 is elevated at the optimum speed V2 until the injection needle 1 is pulled out of the raw massive beef after reaching the deepest position. After the injection needle 1 is pulled of the raw massive beef, the infection needle 1 is elevated at the high speed V1.

    • PROBLEM TO BE SOLVED: To obtain a smoker that can homogenize the distribution of salt in the meat or food material, permits the swift permeation of smoke, increase its taste, flavor and material yield and is useful for manufacturing ham by subjecting the food material to degassing before smoking and the like. SOLUTION: This smoking installation comprises (A) the smoking chamber 2 in which the food material to be smoked is charged, (B) a smoke generator 7 or a smoking solution bomb that is connected to the smoking chamber 2 and jets the smoke or the smoking solution into the smoking chamber 2, (C) a vacuum pump 8 that is connected to the smoking chamber 2 and evacuates the smoking chamber 2, and (D) the controlling unit 14 that is connected to the vacuum pump 8 and the smoke generator 7 or to the smoking solution bomb to control the vacuum pump 8, the smoke generator 7 or the smoking solution. In the smoking process, the smoking chamber is evacuated with the vacuum chamber 8 to deaerate the food material. Then, the smoke or the smoking solution is jetted to the food material to effect smoking under the control of the controlling unit 14.

    • PROBLEM TO BE SOLVED: To provide a feeder for a meat processing suspension, equipped with a device, etc., for producing the suspension capable of mixing a frozen minced meat with a pickling liquid and producing the suspension, capable of raising the quality of meat and improved in sanitary properties, productivity and labor saving without any fear of bacterial contamination. SOLUTION: This feeder for a meat processing suspension comprises a device 1 for producing the suspension capable of mixing a frozen minced meat such as a lean meat or fat with a pickling liquid and producing the suspension, a storage tank 9, the first flow passage 8 for connecting the device 1 for producing the suspension to the storage tank 9 and feeding the suspension in the device 1 for production to the storage tank 9, a cooling jacket 11 installed in the storage tank 9, a coolant feeding source, connected to the cooling jacket 11 and feeding the coolant to the cooling jacket 1 and cooling the suspension in the storage tank 9, a vacuum source 13, capable of evacuating the interior of the storage tank 9 and vacuum deaerating the suspension in the storage tank 9 and the second flow passage 18 for connecting the storage tank 9 to an injection needle and feeding the suspension to the injection needle.
