    • PROBLEM TO BE SOLVED: To provide a highly functionalized fermented product (fermented food) by directly subjecting a fructan-containing raw material (especially a raw material highly containing fructan-containing Allium sativum or scallion) to lactic fermentation without carrying out heat treatment or enzymatic treatment. SOLUTION: A fructan-containing raw material is subjected to lactic fermentation by using lactic acid bacteria Lactobacillus plantarum S506 strain (NITE BP-643), having fructan assimilating ability, a variant strain from the S506 strain, having assimilating ability or a separated strain from Lactobacillus plantarum having the same mycological properties as that of the S506 strain.     • PROBLEM TO BE SOLVED: To provide a technique of eliciting excellent physiologically active effects by merely subjecting citrus fruit rinds to a simple treatment, resulting in creating the new demand of such citrus fruit rinds and utilizing them; further, to thereby easily produce and provide at low costs medicaments and functional food/drink having excellent physiological active effects.SOLUTION: There are provided a fermented composition obtained by fermenting citrus fruit rinds with koji molds, a fermented composition of the supernatant obtained by the fermentation with koji molds of the fermented composition followed by making a solid/liquid separation; and medicaments and functional food/drink each containing the fermented composition as an active ingredient and having neurite extension effects, memory-ameliorative effects and anti-Alzheimer effects.
