    • The present invention refers to a method and process for the encapsulation of highly water soluble materials in the further termed "Reverse Phase Layer-by-Layer (RP-LbL) Encapsulation". State of the art polyelectrolyte self assembly Layer-by-Layer coating or encapsulation methods are only applicable to non water soluble materials. The current invention provide a novel method to extend the material spectrum to highly water soluble materials by using non-ionized polyelectrolytes in an organic phase (Reverse Phase) instead of polyelectrolyte salts in an aqueous environment of the common art. Reverse Phase LbL is applicable to encapsulate highly water soluble substances, such as proteins, sugars, ascorbic acid, fragrants, inorganic salts, amino acids and vitamins, which could not be encapsulated by the current LbL technology.
