    • PURPOSE: A surface-treating agent for sweet potato and a producing method for the same using a purple-colored sweet potato extract are provided to improve the marketability of sweet potatoes. CONSTITUTION: A surface-treating agent for sweet potato improves the storage property of sweet potato. The pH of the surface-treating agent is controlled within pH 2.0~4.0. The surface-treating agent additionally contains 5 ~ 7%(w/v) of sugar. A method for preparing the surface-treating agent comprises the following steps of: mixing a raw material of a purple-colored sweet potato and an extraction solvent and pulverizing the mixture; and filtering the mixture to obtain an extract for coating sweet potato. The raw material of the purple-colored sweet potato is dried at 60 ~ 70°C. The extraction solvent represents water or an aqueous citric acid solution containing 0.1-0.4wt% of citric acid.
    • 目的:提供甘薯的表面处理剂及其制备方法,以提高红薯的市售性。 构成:红薯表面处理剂提高甘薯的贮藏性能。 表面处理剂的pH值控制在pH2.0〜4.0。 表面处理剂另外含有5〜7%(w / v)的糖。 制备表面处理剂的方法包括以下步骤:将紫色甘薯的原料与萃取溶剂混合并粉碎混合物; 并过滤混合物以获得用于涂覆甘薯的提取物。 紫色红薯的原料在60〜70℃下干燥。 提取溶剂表示含有0.1-0.4重量%柠檬酸的水或柠檬酸水溶液。
