The insert (1, 11) incudes a means (2, 16) for allowing communication between the inside of the insert (1, 11) and the container. The insert (1, 11) includes a hinge (6, 15) surrounding the communication means (2, 16) so that the means (2, 16) initially abuts a seat (5, 12), but flexes away from the seat (5, 12) upon opening the container. Preferably, the hinge (6, 15) resists the communication means (2, 16) flexing back into abutment with the seat (5, 12) after opening of the container.

    • An openable but sealed container (50) containing a carbonated beverage (52) held under a super-atmospheric pressure includes a hollow insert (10, 12, 70, 80) which contains gas at a super-atmospheric pressure, which has a restricted orifice (22, 79, 84), which floats on the beverage (52), and which includes orientation means (18, 72, 86) which orientates the insert so that the restricted orifice (22, 79, 84) is submerged in the beverage (52). On opening the container (50), gas from inside the insert (10, 12, 70, 80) is jetted via the restricted orifice (22, 79, 84) into the beverage (52) to generate a close-knit creamy head as it is dispensed. The orientation means (18, 72, 86) is symmetrically arranged relative to a vertical plane containing the restricted orifice (22, 79, 84). Using a floating insert and arranging the orientation means in this way ensures that the restricted orifice (22, 79, 84)is always at the lowermost point of the insert. Thus the risk of the orifice being inadvertently exposed within the headspace in the container is minimised especially during dispensing of the beverage.

    • When dispensing carbonated beverages, particularly beers and especially draught stout, it is desirable to obtain a close-knit creamy head. This contributes to a creamy taste and adds considerably to the customer appeal. To provide such a head a container (1) containing a carbonated beverage (13), includes a pod (6) located within the head space (14) above the level of the beverage (13) and containg a gas, the pod (6) including a hole (11) in its lower part above the level of the beverage (13) and means (12, 16) to ensure that only gas is discharged from the pod (6). The arrangement is such that when the container (1) is closed the pressures of the gas in the pod (6) and in the head space (14) are in equilibrium, but, as soon as the container (1) is opened to reduce the pressure inside the head space (14) of the container (1) the gas at super atmospheric inside the pod (6) is jetted out of the hole (11) and into the beverage (13) in the container (1) to cause shear of the beverage (13) and the liberation of small bubbles which accumulate in a surface layer on the beverage (13). When the beverage (13) is dispensed the small bubbles in its surface layer act to seed the generation of small bubbles throughout the remainder.

    • A method of removing excess yeast, high molecular weight proteins and other suspended matter from fermented beer by bringing the beer into contact with magnetic particles (12). When immersed in beer, the magnetic particles (12) have a net positive charge, but their surfaces have both negatively and positively charged sites. The suspended matter in the beer is attracted by the charged sites of the magnetic particles (12). The magnetic particles (12), together with the adsorbed yeast and other material, is separated from the beer using a magnetic field. The magnetic particles (12) are preferably iron oxides and, more preferably, are essentially formed from magnetite.

    • Recently there has been considerable interest in systems for dispensing beverage such as beer from cans, and other small containers, which gives a similar appearance to dispensing the beverage from draught. Such an apparatus comprises a container (5, 6, 22, 32, 33) containing the beverage (4), an active surface (3, 20, 31) separated from the beverage (4), and a means for allowing the active surface (3, 20, 31) to be exposed to the beverage (4) after opening the container (5, 6, 22, 32, 33) to generate foam in the beverage (4) as it is dispensed. The active surface (31) may be separate from the container (32, 33) prior to opening, for example by being provided as a lining on the inside of a spout (30) (Figure 9 and 10). Alternatively, the active surface (3, 20) may be located within the container (5, 6, 22), but held physically separated from the beverage (4) prior to opening of the container (5, 6, 22). The active surface (20) may be included in a part of the container (22) distant from the beverage (4), for example in the neck of a bottle (22), and preferably covered by a stopper (23) (Figure 8). The active surface (5, 6) may be held physically separate by being located inside a capsule (1) which is arranged to open or rupture on opening of the container (5, 6).
