SOLUTION: A method for obtaining an extract from the fruit body of Grifola frondosa is disclosed in which the fruit body is extracted with no use of solvent hazardous to human body, for example, acetone or ether and the inadequate substances as a healthy food, because they has immunosuppressive action, can be removed almost perfectly. SOLUTION: The method for producing an active substance derived from Hericium erinaceum comprises (1) a step of extracting the dried fruiting body of Hericium erinaceum with ≥90 vol.% ethanol and obtaining an ethanol extract, (2) a step of concentrating the ethanol extract and then adding water and (3) a step of allowing the extract stand under low temperature of ≥4°C and ≤10°C and collecting the resulting floating matter on the surface of liquid.
