    • PROBLEM TO BE SOLVED: To provide rice grains which have an anti-diabetic action for lowering a blood glucose level or maintaining the blood glucose level within a constant range and are used for diabetes, and to provide cooked rice using the same. SOLUTION: The present rice grains for the diabetes comprise rice grains (polished rice or the like) and arabinogalactan adhered to the rice grains and having an anti-diabetic action. The arabinogalactan has a skeleton whose β-1,6-bonded galactose sugar chain is highly branched through β-1,3-bonds. (1)α-arabinose as a side chain is bonded to the galactose constituting the skeleton through an α-1,3 bond. Or (2) α-arabinosyl (1→5) α-arabinose is bonded through an α-1,3-bond, and (3) α-rhamnosyl (1→4) β-glucuronic acid is bonded to a part or all of the terminal galactose of the skeleton through β-1,6-bonds. The constitution ratio of rhamnose : glucuronic acid is 1:0.7 to 1.2, and the constitution ratio of arabinose : galactose is 1:1.8 to 2.3.
