    • A low viscosity, high gel strength protein-starch composition is provided. The protein-starch composition contains a protein material and a starch material which are complexed together where the starch material is in a substantially non-gelatinised state. The protein-starch composition has a low viscosity prior to cooking, yet has a high gel strength after being cooked. A meat emulsion is also provided which contains a meat material and the protein-starch composition. A process is provided for forming the protein-starch composition in which an aqueous slurry of a protein material is formed, the protein in the slurry is denatured by subjecting the slurry to temperatures sufficient to denature the protein, a starch material is mixed into the slurry of denatured protein, and the slurry of starch and protein material is spray dried under conditions which cause the protein material and starch material to complex without gelatinising the starch material. A process for forming a meat emulsion with the protein-starch composition is provided in which a meat material and the protein-starch composition are blended together under conditions insufficient to gelatinise the starch material in the protein-starch composition.

The use of a soy material in reducing coronary heart disease risk in a human is also provided, in which a medicament for human administration is in the form of a cereal composition and comprises the soy material, and the soy material comprises at most 20 µmol/g raffinose and 35 µmol/g stachyose, and at least 200 µmol/g sucrose.

    • A direct action dry anti-mycotic composition is provided which is a natamycin material having an average particle diameter of 10 microns or less and/or an average surface area to weight ratio of at least 2 m 2 /g. The natamycin material may be utilised in a form fit for human consumption on or in a dry perishable material susceptible to spoilage by mould, yeast, or fungal growth. The natamycin material provides effective protection to a perishable material from mould, yeast, or fungal growth at concentrations of from 1 ppm to 5 ppm and higher. Methods are also provided for formulating and utilising the natamycin material.

    • The present invention is a composition comprising a plant sterol and a soy protein material and/or and isoflavone selected from genistein, daidzein, glycitein, biochanin A, formononetin, and their naturally occurring glycosides, where the plant sterol comprises at least 0.49% of the composition, by weight. The present invention is also a method for decreasing the blood concentration of total and LDL cholesterol in a human in which a plant sterol and a soy protein material and/or an isoflavone are co-administered to the human, where the plant sterol comprises at least 0.49%, by weight, of the combined weight of the plant sterol and the soy protein material and/or the isoflavone. The present invention is also a method for preventing or minimising the development of atherosclerosis in a human in which a plant sterol and a soy protein material and/or an isoflavone are co-administered to the human, where the plant sterol comprises at least 0.49%, by weight, of the combined weight of the plant sterol and the soy protein material and/or the isoflavone.

    • A stable high fat and high protein content emulsion and milk replacer are provided. The emulsion contains a protein material, a fat, and a carbohydrate, where the protein material is present in about 25%-50% by weight of the total weight of the protein material, fat, and carbohydrate, the fat is present in about 25%-50% by weight, and the carbohydrate is present in at least about 10% by weight. The milk replacer composition contains a protein material and a fat, where the protein material and fat are each present in at least about 25% of the composition by weight. Preferably the milk replacer composition also contains at least 10% of a carbohydrate by weight. A process for producing the emulsion is provided wherein an aqueous mixture of a first portion of a protein material, a fat, and a carbohydrate is formed, the aqueous mixture is homogenized at a temperature and pressure effective to form a homogenized emulsion, and the homogenized emulsion is mixed with a second portion of protein. The milk replacer is formed by spray drying the emulsion.
