[Class 28 (ii)] In a meat-tendering apparatus, the stripper 12, 14 descends with the knives 10 until it contacts with the meat when it is locked by clamping-screws 22, turnable by arms 23 connected by an operating-rod 24, bearing on rods 35 carried by the stripper frame 12. The stripper remains locked whilst the knives penetrate into the meat and are withdrawn therefrom. The stripper comprises slightly pointed bars on the front 14, the bars passing between the knives and the points resting in a groove in the rear edge of the frame 12. The frame 12 has vertical rods (not shown in Fig. 2) slidable in holes in the knife-carrying block 9, the upper ends of the rods being provided with washers retained in place by split-pins, so that the knife block 9 raises the stripper after the knives have left the meat and the locking-screws 22 have been released. The front 14 is secured to the frame 12 by screws 17. Rods 11 are secured to the frame 12 and slide in tubes 8 secured to the knifeblock 9; the tubes 8 being slidable in tubes 7 carried by the side. supports 6. Springs 25 are arranged to press on the rods 11 to urge the stripper downwards. The knives are depressed by a handle 26 on a shaft 27 having arms 28 connected to the knife block by links 29. Springs 31, anchored at one end, and connected to an arm on the shaft 27, raise the knives when the handle is released. The bar 24 is provided with stop-pegs to prevent the screws 22 from being turned too far. The meat is placed. on a board 5 which is then slid beneath the knives.

[Class 28 (ii)] A meat-tendering apparatus, which as shown is as described in Specification 503,054, is provided with means which compress the meat after the withdrawal of the knives to close the cut: made thereby. Plates 8, mounted on spring-loaded plungers 7, are arranged one on each side of the sliding board 5, and are each connected to one end of a chain or cable 11 which passes over a curved projection 12 inside the hollow side support 6, the other end of each chain being connected to a block 13 slidable in a vertical slot 14 in the corresponding side support. To the outer sides of the blocks 13 are connected cranked rods 15 which are pivotally connected to arms 16 secured to the shaft 17 carrying the operating-handle 18. Pegs 22, on the plates, slidably engage tubular members 23, turning of the plates being thus prevented. A plate 25, having a weighted front edge 26, is hinged to the front of the stripper-plate frame 24. In use, when the knives 9 have penetrated the meat and have been withdrawn, the meat is moved, by means of the sliding board 5, into alignment with the plates 8. The handle 18 is then forced down to depress the blocks 13 and thus to allow the spring-loaded plates 8 tu compress the meat between them. The edge 26 of the plate 25 smoothes over the surface of the meat as it is withdrawn and obliterates the incisions.
