An aromatic ether acylation process is described, particularly a process for acylating an unsubstituted aromatic ether and more particularly anisol. The process of the invention includes reacting the ether with an acylation agent in the presence of a zeolite catalyst, and is characterised in that the acylation reaction is conducted in the presence of an effective amount of a catalyst containing a beta zeolite with an atomic ratio, designated as "global Si:Me " between the number of atoms of the silicon component and the number of atoms of any trivalent component Me contained in the zeolite, higher or equal to 15, preferably in the range of 15 to 55 and even more preferably of 18 to 35.
