The present invention relates to an oil composition for processing a meat using a plant material such as a vegetative oil and dietary fiber to provide a meat maintaining a natural marbling appearance and having a natural flavor of a meat, and to a meat product using the same. The oil composition for processing a meat of the present invention can be injected or absorbed to a part of a meat material which is not preferred by a consumer because of not having marbling.
