PROBLEM TO BE SOLVED: To provide a safe and sure nitric acid reducing agent for postharvest agricultural products and a method for reducing nitric acid of postharvest agricultural products, wherein small amount of carbon dioxide gas is continuously generated in postharvest time such as refrigeration storage and refrigeration transportation of the postharvest agricultural products to continuously keep a high carbon dioxide concentration around the agricultural products so as to reduce nitrogen investment of the leaves in the agricultural products and thereby to effectively reduce nitric acid. SOLUTION: The nitric acid reducing agent for postharvest agricultural products contains an aromatic organic acid and a carbonate, and a method for reducing nitric acid of postharvest agricultural products employs the nitric acid reducing agent.
