本发明提供了一种深棕色的酵母抽提物热反应产物及其制备方法和应用。酵母抽提物热反应产物由包括以下成份的原料经热反应制成:酵母抽提物75-85重量份和糖类15-25重量份。将上述原料包加入到水中,得到混合物;将所得混合物在反应温度为80-95℃,优选85-95℃下进行热反应,得到酵母抽提物产品。该酵母抽提物热反应产物应用于深色色泽要求的食品、调味品,替代焦糖色素使用。

The invention provides a dark-brown yeast extract thermal reaction product as well as a preparation method and application thereof. The yeast extract thermal reaction product is prepared from the following raw materials in parts by weight through a thermal reaction: 75-85 parts of yeast extract and 15-25 parts of saccharide. The preparation method comprises the following steps: adding the raw material bag into water to obtain a mixture; performing a thermal reaction of the obtained mixture at a reaction temperature of 80-95 DEG C, preferably 85-95 DEG C, to obtain a product of yeast extract. The thermal reaction product of yeast extract is applied, instead of caramel pigment, to the food and seasoning with deep color requirement.
