The invention discloses a preparation method of high fiber orange type fruit particles; the preparation method includes pretreatment of orange type fruit peel, wet method ultra-fine smashing, sol, compounding and cooking, drying and chopping, and package. The high fiber orange type fruit particles are prepared from orange type single or mixed fruit peel pulp, malt syrup, white granulated sugar, modified starch, starch, maltodextrin, colloid, honey, monoglyceride, sodium carboxymethylcellulose, citric acid and sodium citrate. The method fully uses the waste resource of orange peel; the high fiber fruit particle and strip are rich in dietary fiber, thereby further shortening the drying time; the energy consumption is few; the prepared particle product is elastic and flexible, and contains general flavone, pectin, and other health-care functional matters; the fruit particle is high in nutrition, strong in orange taste and can completely meet people demand of natural health leisure food.
