The invention discloses a production method of concentrated passion fruit juice with seeds. According to a conventional production method for the concentrated passion fruit juice, a heating concentration and heating sterilization fresh-keeping manner is adopted, so that vitamins and aromatic volatile nutrient components in the fruit juice are destroyed. The production method disclosed by the invention comprises the following steps of separating passion fruit flesh from passion fruit seeds, and storing the passion fruit seeds for standby application; heating the passion fruit flesh to 43-47 DEG C, and adding pectinase of which the activity is 20000-50000U/ grams for enzymolysis, after enzymolysis is performed, performing concentration until the sugar degree is 49-51% with a film concentration machine so as to obtain the concentrated passion fruit juice, and then adding the separated passion fruit seeds to the concentrated passion fruit juice for uniform stirring; and packing the concentrated passion fruit juice with seeds, putting the packed passion fruit juice in a snap freezing chamber of minus 38 to minus 42 DEG C for snap freezing, and moving the frozen passion fruit juice to a freezer of minus 18 DEG C for storage. According to the production method disclosed by the invention, a snap freezing refrigeration method is used for fresh keeping, so that special nutrient components and special flavor in passion fruits are maintained to the maximum extent; the original passion fruit seeds are added in the flesh, so that the content of fatty acid and unsaturated fatty acid methy esters, which are necessary for human bodies, are as high as 80%.
