Im Betrieb der Vorrichtung werden zunächst in einem zu kühlenden Fleischstück mittels der Stichnadeln (8, 9) Stichkanäle erzeugt, in die anschließend, gleichfalls mi Hilfe der Stichnadeln (8, 9) die Trockeneispellets (27) aus den Durchführungen (26a, 26b) der Ladeeinheit eingebracht werden.
