    • The present invention relates to a device for grinding or sharpening knife blades or similar, wherein at least one grinding means (7) is provided to perform sharpening movements for grinding or sharpening the knife blade (2) and wherein the knife blade (2) can be located in at least one sharpening position (S) in a support device (8) in order to permit sharpening of said knife blade (2) by means of the grinding means (7). The grinding means (7) comprises at least one permanent magnet (10) which through attraction by the knife blade (2) is provided to pull the grinding means (7) to the knife blade (2) such that said grinding means (7) engages the knife blade (2) when said knife blade (2) is located in sharpening position (S), and to hold the grinding means (7) in engagement with the knife blade (2) during grinding or sharpening.

    • Two counter-rotating, intermeshing, toothed wheels grind opposite sides of an interposed blade to create or burrIessly sharpen a knife-edge on the blade. The wheels can be solid or comprised of a fixed stack of toothed disks, concentrically aligned, the teeth of each succeeding disk angularly offset in a common direction from the teeth of the next preceding disk to create a wheel having a plurality of uniform, elongated composite teeth around the circumference of the stack, the teeth being angled from the wheel's axis. Two such wheels, one with teeth angled in an opposite direction, can be counter-rotated and because of the oppositely angled teeth, are capable of intermeshing. The degree of intermeshing can be selectively varied to correspondingly vary the sharpening angle. The apex ridges of both the solid and composite teeth can be selectively profiled to sharpen non-uniformly, e.g. serrating a blade edge.

    • A sharpening apparatus with substantially rigid sharpening wheels disposed substantially fixedly on a rotatable drive shaft. An edge of a blade inserted in a slot in the apparatus comes into contact with a sharpening surface on a sharpening wheel. A sliding block associated with that sharpening surface slidably yields to accommodate the inserted blade and applies a force on the blade towards the sharpening surface. The user may selectively adjust force on the blade to achieve more or less sharpening of the edge of the blade. The plurality of sharpening surfaces can offer different levels or degrees of sharpening.

    • A method and apparatus (10) for grinding a knife blade (66) to form a sharpened edge. The blade (66) is held in a fixture (56) including a self-centering clamp (57) with a pair of jaws (96, 98) gripping the knife blade (66) by engaging opposite sides (76, 78) of a part of the blade (66) tapered toward an edge location, and holding the blade (66) so that the intended edge location of the blade is in a desired location with respect to the fixture (56). This permits use of profiled grinding wheels (32, 34) of hard material mounted on a carriage under computer control to grind an edge bevel accurately on each side of the blade, forming a sharp edge.
