    • An oven comprising a housing, a cavity located within the housing, and a rotator having a first food loading section and a second food loading section is disclosed. The cavity includes a single opening for loading a food item into the cavity. If one of the first food loading section and the second food loading section is located outside of said cavity, then the other of the first food loading section and the second food loading section is located within said cavity. A first cook setting of the oven when the first food loading section is within the cavity and a second cook setting of the oven when the second food loading section is within the cavity are independently controllable. The first food loading section and the second food loading section may be separated by a divider, which prevents heat from escaping from the cavity through the opening.

    • A device and method are provided for measuring and controlling temperatures of a cooking platen. In particular, according to the invention, a surface temperature sensor is configured to measure a temperature on or proximate to a cooking surface of the platen and an internal temperature sensor is provided to measure an internal temperature of the platen, which may be proximate to the hottest location in the platen, i.e., the opposite surface of an insulated platen or the core of an uninsulated platen. The surface temperature sensor provides an accurate reading of the actual cooking surface temperature, while the internal temperature sensor provides a better indication of total heat energy stored in the platen, being less sensitive to surface fluctuations. A microprocessor controls the rate of heat energy addition to the platen based on information from both temperature sensors.

    • An oven includes a cooking chamber configured to receive a food product, a user interface configured to display information associated with processes employed for cooking, first and second energy sources, and a cooking controller. The first energy source provides primary heating and the second energy source provides secondary heating for the food product. The cooking controller may be operably coupled to the first and second energy sources. The cooking controller may include processing circuitry configured to enable an operator to make a browning control selection via the user interface by providing operator instructions to a selected control console rendered at the user interface. The selected control console may be selected based on a cooking mode of the oven. The browning control selection may provide control parameters to direct application of heat to the food product via the second energy source.

    • An oven has a housing, a heat source, and an aperture defined in the housing. A substantially horizontal deck rotates within the housing, and a number of substantially horizontal pallets are mounted on the deck to rotate relative to the deck. Each pallet has a lip. A source of motive power and a transmission system drive the main deck to revolve within the housing, and also drive the pallets to rotate relative to the main deck. The transmission system constrains rotational movement of the pallets relative to the main deck and causes each pallet to be oriented with its stopping member positioned opposite the aperture whenever that pallet is aligned with the aperture. The oven has a control system that monitors the length of time that an item remains in the oven, permitting items having different cooking times to be cooked simultaneously, even when introduced in a random order.
