    • An apparatus includes a housing, a heat conductive container for receiving yogurt ingredients, a heating unit installed in the housing and provided with a heating element for heating the container, a cooling unit installed in the housing and provided with a refrigerant pipe for cooling the container by a refrigeration cycle caused by supplying electric power, a stirring unit provided with a stirring blade which is driven by a motor to be rotated in the container, and a control unit configured to selectively control the heating unit, the cooling unit and the stirring unit to make frozen yogurt of the yogurt ingredients. A method includes steps for preparing frozen yogurt using the apparatus, wherein the frozen yogurt is fermented, ripened and frozen under control of the control unit within a single container, for example. In alternative examples, other fermented yogurt and non-fermented ice cream or sherbet products are made using the same apparatus.

    • This invention relates to a machine for making, storing and dispensing yogurt, comprising a tank for processing a certain quantity of milk, a device for inoculating milk ferments inside the tank, a cylinder for keeping and storing the yogurt, which is connected to the processing tank, a tap for dispensing the yogurt coming from the keeping and storing cylinder; the machine also comprises a heating and cooling unit connected to the processing tank and capable of causing the milk to reach a first pasteurization temperature, a second inoculation temperature, at which a certain quantity of milk ferments is inoculated in the processing tank through the inoculating device, and a third fermentation temperature of the milk ferments; the heating and cooling unit is also connected to the keeping and storing cylinder to cool the yogurt coming from the processing tank and to bring it to a fourth cooling temperature and to a fifth storing and dispensing temperature.

    • Process for the continuous preparation of a fermented milk in which (1) a milk fermented by lactic acid bacteria is prepared in a first device, the fermented milk being subjected to stirring and pH conditions such that syneresis of the milk does not occur, the pH being regulated by the continuous addition of unfermented milk to the first device and continuously drawing off fermented milk from the first device; (2) in a second, post-acidification device, the fermented milk drawn off from the first device is cooled to a temperature of less than 15.degree. C. so as to subject the fermented milk to a post-acidification, the residence time of the fermented milk in the second device being adjusted so that at the outlet of the latter, the pH of the fermented milk is less than pH 4.7; and (3) a fermented milk having a pH of less than pH 4.7 is continuously drawn off from the second device.

    • The apparatus comprises a vat having a lateral wall and a bottom for pasteurizing, maturing and maintaining a product. A cover adjacent to the lateral wall and to the bottom controls the temperature of the product present in the vat. A first heat-exchange circuit is defined by the cover and by the vat. A heat-exchange fluid circulates in the first heat-exchange circuit. The first heat-exchange circuit includes a heat generator for the heating of the heat-exchange fluid and includes a first heat exchanger for the cooling of the heat-exchange fluid. A second heat-exchange circuit has a tank. A diathermic liquid circulates in the second heat-exchange circuit. A second heat-exchanger is disposed in the tank, and a refrigeration group is connected, in a heat-exchange relationship, to the second heat-exchanger. The second heat-exchange circuit is connected to the first heat-exchanger by a by-pass conduit parallel to the first heat-exchanger. A first on-off valve is connected to the by-pass conduit and has a second on-off valve connected to an inlet of the first heat-exchanger to selectively control the flow of diathermic liquid passing from the second refrigeration circuit. A cleaning circuit has a cleaning water tub, an inlet, and an outlet communicating respectively with a cleaning water source and a discharge drain. An electronic control system programs and commands the preparation and distribution of the product.
